WHAT IS FERMENTATION?

Fermentation is a metabolic process that converts sugars into cellular energy and a metabolic by-product, lactic acid, which in turn produces fantastic digestive enzymes and healthy gut flora and cuts the sugar content of a food … all in one!

DIFFERENCE BETWEEN FERMENTING AND PICKLING

Lacto-fermentation uses salt (and sometimes whey) to encourage the veggie’s natural good (lactobacillus) bacteria to flourish, producing lactic acid that staves off harmful bacteria.

Pickling uses heat, vinegar and sugar which on the other hand, pretty much kills off naturally occurring beneficial bacteria and enzymes along with vitamin C. Therefore shop bought Sauerkraut or pickles simply don’t have the amazing health benefits just like homemade ferments. Also they are often pasteurised, all which kill the lactic-acid producing bacteria, which defeats the whole purpose.
